Sometimes the most delicious concoctions are derived from the least expected of combinations.

I’ve recently been engaging my friends in discussions regarding how they make sure to get all their veggies in for the day. The most popular has been incorporating spinach in smoothies. I was hanging out with Flautamom and my bestie Cin and they had THE best spinach smoothie recipe. Spinach, lemon, grapes, and banana: one sip and you get a zesty explosion of liquid sunshine.

Spinach is a super food with a serious punch of antioxidants, Vitamins A, C and E, and iron among other nutrients. It also has the highest protein content than any other vegetable. 1 cup of Spinach provides 12% Daily Value of protein!

A little history. Dishes described as “Florentine” come from the Florence region of Italy. “Florentine” dishes feature spinach and cream, accompanied by either eggs, chicken, or meat. Yum! Catherine de Medici, the Italian wife of the French Henry II, was rumored to be a huge spinach advocate. Who knew??


Recipe: Citrus Spinach Monster

4 cups Spinach

2 cups green grapes

1 lemon (seeds and pith removed, use thinnest layer of lemon peel and the pulp)

1 cup ice (more if needed)

1 banana

1 tbs. sweetener of choice (optional)

1. Toss all ingredients in a blender. Blend. Serve. Drink. Glow.
